Tried out a Delia classic recipe and wasn’t too impressed. The recipe quantities by themselves produced something with a dough like heavy consistency, unlikely to produce a light sponge. I ended up adding milk to try and get something closer to a batter.
Even so, it didn’t rise very well so what should have been a two tier cake came out more like a pancake. Still, I prefer the idea of marscapone icing to buttercream so happy to see if it tastes better than it looks!
